Chicken Salad

3 cups – Cooked cubed or chopped chicken (canned chicken, rotisserie chicken, or baked chicken breasts)

1/2 cup – chopped Walnuts

4 celery stalks – chopped

1 cup – Grapes ( I cut them in half)

1/2 cup – sliced dill pickles – chopped

2 tsp salt

freshly ground pepper

2/3 cup – Miracle Whip or Mayo

2 tbsp. – Yellow Mustard

Fresh dill  for garnish (optional)


  • Prepare all the salad ingredients and toss them together in a large bowl
  • Then stir in the mustard and Miracle whip or mayo

More yummy options to add to the salad -sliced boiled egg, dried cranberries, chopped bell peppers, red onions or add a little Sriracha sauce to your mayo mix for a spicy kick. If your chicken is a little dry, you may want to add more mayo, mustard or even pickle juice.

Best ways to eat it other then just out of the large prep bowl – between two whole wheat pieces of bread, on spinach (or any other greens), in a lettuce wrap or in a tortilla.
