Cauliflower Casserole

INGREDIENTS:

1 large head cauliflower

6 -8 slices cooked bacon, crumbled (more if you’re making it for Bradley)

6 tablespoons chopped chives

½ package (about 4 oz) of cream cheese

2 cups cheddar cheese

DIRECTIONS

Preheat oven to 425.

In a large pot boil water and cook cauliflower for 8-10 minutes, drain and mash, like potatoes.

In a large bowl combine cream cheese, 1/2 of crumbled bacon, 3 TBS chives, 1 cup cheese, and cauliflower, mix well.

Place mixture into a greased baking dish and cover with remaining 1 cup of cheese and the rest of the bacon.

Bake for 15-20 minutes until cheese is melted and casserole is bubbly. (YUM!)  Top with remaining chives and serve.
