Pumpkin Cookies with Cream Cheese Frosting

What could be better than pumpkin cookies topped with cream cheese frosting?

That’s what I thought… nothing!

  • 2 and 1/2 cups all-purpose white flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 1/2 teaspoons ground cinnamon
  • 2  teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • cup granulated white sugar
  • cup light brown sugar, lightly packed
  • 1/2 cup (1 stick) unsalted butter, softened 
  • 1 cup canned pumpkin, do NOT use pumpkin pie filling 
  • 1 large egg
  • 1 teaspoon vanilla extract
Cream Cheese Frosting:
  • 4 ounces cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 2 1/2 cups powdered sugar, sifted 
  • Pinch of salt
  • 1 teaspoon vanilla extract


  1. Prepare a large sheet pan by lining with parchment paper. Preheat oven to 350 degrees F.
  2. In a large bowl, add flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt; Whisk to combine and set aside.
  3. In a medium bowl, cream together the butter, white sugar, and brown sugar. Add 1 cup pumpkin, the egg, and vanilla. Beat until the mixture is creamy. Add in the dry ingredients and mix until combined. Don’t over-mix as it will create denser cookies.
  4. Optional : Place in the refrigerator for 20 minutes, to firm up the dough a bit. ( The batter is wetter than normal cookie dough – so don’t worry if you can’t roll into balls of dough, if you decided not to refrigerate it.)
  5. Place heaping tablespoons of the batter on the baking sheet and flatten the balls of dough slightly.
  6. Bake for 9-12 minutes, watching carefully, to avoid over-baking. These should be  slightly under-baked and soft, but the tops shouldn’t be shiny at all. Remove form oven and allow to continue “baking” on the sheet pan (2-3 minutes)  before removing to a wire cooling rack to cool.
  7. Meanwhile, make the frosting. Beat the softened cream cheese and butter until creamy.  Slowly, add the powdered sugar, salt, and vanilla. Beat until everything is combined and the frosting is soft and creamy.
  8. Generously frost the cooled cookies. Enjoy!
